Frozen lemon juice Primo Fiore is the pure juice of Sicilian lemons, with a single ingredient and no added sugars or preservatives. With a Brix of 7±2, an intense acidity and a fresh citrus aroma, it offers chefs, pastry chefs and bartenders a constant, ready-to-use acidity all year round, in a practical 3 kg professional pack (12 kg carton).
What Frozen Lemon Juice Is
It is 100% natural lemon juice, extracted and frozen immediately after pressing to lock in aromas, vitamin C and the typical fruit profile. Freezing preserves the organoleptic properties far better than pasteurised juices, with no need for preservatives. A single ingredient, no allergens listed in Reg. EU 1169/2011, GMO-free and with no irradiation treatment.
Sicilian Origin
The fruit comes from Italy, specifically from Sicily, home of some of the most aromatic lemons in the Mediterranean. Lemons contain up to 3% citric acid by dry weight, the highest concentration among citrus fruits, which gives this juice its bright, clean acidity.
The Producer
The juice is produced by Rogelfrut (Proppy-Gel S.r.l. and F.A.R. Soc. Agr. Coop.) in Piasco and Rossana, in the province of Cuneo, Piedmont, under the Primo Fiore brand. The company specialises in frozen fruit and juices and works to the hygiene criteria of Reg. EC 852/2004.
Sensory Characteristics
Uniform colour typical of the variety, fresh and unmistakable lemon aroma, sharp and clean taste. Brix 7±2, fewer than 10 seed fragments per 1000 g. The frozen format keeps the juice stable and faithful to fresh lemon.

Professional Uses
In pastry it is the acidic base for Sorrento-style delizia al limone, sorbets, lemon creams and mousses. In the kitchen it is perfect for cold fish marinades (anchovies), emulsified sauces such as the Milanese salsa gialla and the tonnato sauce, and as a finishing touch on octopus salad or impepata di cozze. At the bar it is the king ingredient for limoncello, sours and citrus cocktails. Dose with precision so the acidity supports rather than overpowers the dish.
