Sapurè is a family business based in Pagani, in the province of Salerno, in the heart of the Agro Sarnese-Nocerino, the historic tomato-preserving district of Campania. Founded by Salvatore Iovino with his sister Titti, with their mother Donna Pina supervising production, the company combines the traditional techniques of the area with modern 4.0 process control: firm, ripe tomatoes are selected by hand and processed the same day. Organoleptic Characteristics
Golden yellow colour, fleshy pulp and a clearly sweet profile with much lower perceived acidity than red tomato preserves: 4.60 g of naturally occurring sugars per 100 g. The delicate flavour does not cover fish, shellfish or fresh cheeses, which makes the yellow pacchetella the preferred tomato of contemporary seafood cuisine and white gourmet pizzas.
