Ristoris Bella di Cerignola Olives are the world's largest green table olives, reaching up to 30 g per fruit, packed in brine in a 1.6 kg net glass jar (1,050 g drained), case of 6. This native Puglia cultivar offers crisp, fibrous, mild flesh and an unmistakable giant size that turns any aperitif or antipasto into a showpiece. Ideal for restaurants, pizzerias, delicatessens and hotels looking for an authentic, high-impact Italian product.
What Bella di Cerignola olives are
The Bella di Cerignola is a table-olive cultivar native to the Tavoliere delle Puglie, the great plain around the town of Cerignola in the province of Foggia, in the heart of ancient Daunia. Some scholars trace it back to the Roman Orchites olives, others to varieties introduced during the Aragonese period before 1400; since it was never part of the indigenous Iberian cultivars, it is regarded as an autochthonous variety of the Cerignola countryside. It is renowned worldwide as the largest green table olive, prized for its plum-like elongated shape, its meaty, fibrous pulp and its very high flesh-to-stone yield.
Geographic origin
The growing area is the plain of Cerignola and the neighbouring municipalities of Stornara, Stornarella and Orta Nova (Foggia), together with San Ferdinando di Puglia and Trinitapoli (Barletta-Andria-Trani). The combination of the deep clay soils of the Tavoliere, the Mediterranean climate and the local know-how gives the fruit its characteristic size and crispness.
The supplier
This selection is produced and distributed by Ristoris Srl, a specialist in Italian preserved vegetables and food-service conserves based in Broni, in the province of Pavia. Ristoris supplies pizzerias, restaurants, bars, bakeries and delicatessens with a broad range of olives, sun-dried tomatoes, grilled vegetables, capers and antipasti, and works under BRC food-safety certification with Halal-certified lines available.
Sensory profile
Processed green using the traditional Sevillian method, the Bella di Cerignola keeps a bright green colour, a firm and crunchy bite and a full but delicate, only slightly bitter flavour. The flesh is thick and fibrous, the stone small in proportion to the fruit, making each olive generous and satisfying on the palate.

Professional uses
Serve them whole on the aperitif counter and on antipasto and charcuterie boards, where their size makes an immediate impression. Pit and slice them for gourmet pizzas, focaccia and rustic breads, or stuff the largest fruits with tuna, anchovy or cream cheese for a classic Italian finger food. They lift mixed salads, panzanella and pasta salads, and pair beautifully with provolone, pecorino, cured meats and a glass of dry white or a Puglia primitivo. Drain before use and keep the brine to top up the jar after each service.
Pairings
Bella di Cerignola olives go hand in hand with sun-dried tomatoes, stuffed peppers, aged provolone, fresh focaccia and extra-virgin olive oil. They are a natural companion on a tasting board built around other Ristoris vegetable preserves available from LAPA.
