What escarole is
Escarole (Cichorium endivia var. latifolium) is a broad-leaf chicory of the Mediterranean tradition, slightly bitter when raw and sweet and tender once cooked. Professional uses
Ready to use as a warm side dish, gently reheated with a drizzle of oil. Ideal as a filling for the Neapolitan escarole pie (pizza di scarola) with olives, capers, anchovies and pine nuts. Excellent on pizza and focaccia, in savoury pies and rustic tarts, folded into frittate and omelettes, or as a bed for fish and white meats. It also works stirred through pasta or risotto for a quick vegetable course.
