What Are Paccheri
Paccheri are one of the most iconic formats of Campania: very wide, short tubes whose name comes from the Neapolitan dialect word for an open-handed slap, evoking the sound they make when they fall onto the plate. The rigati version adds external ridges that increase the surface area and hold even more sauce than the smooth version, making them ideal for professional plating.
The Producer: Pastificio Rummo, Benevento, Since 1846
Pastificio Rummo was founded in Benevento, in the Sannio area of Campania, in 1846, when Antonio Rummo built his first mill for grinding grain along the Calore river. The company has remained in the same family for generations and today produces exclusively pasta in its Ponte Valentino plant, inaugurated in 1991.
The Lenta Lavorazione Method
Since 2005 Rummo has applied its registered Lenta Lavorazione method: longer kneading times and careful processing at every stage. The result is a pasta whose cooking resistance has been certified by Bureau Veritas, staying al dente and structurally intact even after pan-tossing and holding in service — a decisive advantage for busy professional kitchens.
Professional Uses
Classic applications: paccheri with Neapolitan ragù, paccheri with scorpion fish or calamari sauce, paccheri stuffed with ricotta and baked au gratin, and paccheri plated upright and filled for signature dishes. Cook in abundant salted water, drain one minute early and finish in the pan with the sauce. One 500 g pack yields 5-6 portions of 80-100 g of dry pasta.
