What Vidor 1967 cooked ham is

Cooked ham is made from the whole pork leg, deboned and slowly cooked without smoking or curing, unlike raw-cured ham. The Vidor 1967 line is made from selected fresh legs of pigs born, raised and slaughtered in Italy: the leg is deboned by hand, the shank removed and carefully cleaned before tying and steam-cooking, in a process aimed at a compact, rosy slice with a delicate taste.

The producer: Salumificio Sorrentino

Salumificio Sorrentino was founded in 1982 in Mozzagrogna, in the province of Chieti (Abruzzo), by master pork butcher Marino Sorrentino. Today the company is run by his son Giovanni and grandsons Marino and Oreste, and produces the Vidor 1967 line of cooked specialities alongside the traditional cured meats of Abruzzo.
