Sweet Flat Pancetta by Montevecchio
A flat (tesa), sweet cured pork belly produced by Prosciuttificio Montevecchio, in a piece of about 1.8 kg. Unlike rolled or smoked versions, this pancetta is laid flat and mildly seasoned ("dolce"), giving balanced layers of lean and fat for clean slicing and cooking.
How to use it in the kitchen
Dice and render it as the savoury base for pasta sauces, soups, ragùs and risotti, slice it for boards or to wrap meats and fish, or cook it crisp for salads and eggs. The flat format portions easily and renders evenly.
