The producer
This pasta is made by Checco il Pastaio in Creazzo, in the province of Vicenza (Veneto). The workshop selects its raw materials by hand and uses no industrial semi-finished products, following a buoni come a casa philosophy. Each batch is pasteurised and rapidly frozen at -20 C, a process that fixes freshness and aromas while ensuring a 12-month shelf life.
Flavour and texture
The filling is creamy and aromatic: goat robiola gives a clean, slightly tangy note, ricotta rounds it off with softness, while lemon zest (0.6%) brightens the whole with a fresh citrus lift. The thin egg dough, coloured with carrot concentrate, stays tender and elastic after cooking, cradling the filling without breaking.
