What is porchetta?
Porchetta is a central-Italian roast, traditionally from Lazio, made from deboned pork opened like a book and filled with garlic, rosemary, fennel, salt and pepper, then roasted slowly until tender. It is one of Italy's great street and banquet foods.
How to use it in the kitchen
Slice it for panini and piadine (the classic porchetta sandwich), serve warm as a main with roast potatoes, or cold on antipasto and aperitivo boards. The herb-scented meat needs no extra seasoning.
