Sun-dried tomatoes in oil are ripe tomatoes that have been dried to concentrate their sweetness and umami, then preserved in oil, traditionally with garlic and herbs. It is a classic preserving method of Southern Italy (Calabria, Sicily and Puglia), where the hot sun naturally dries the fruit.

How to use them in the kitchen

Drain and use straight from the jar: on antipasto boards and bruschetta, chopped into pasta and risotto, as a pizza topping, blended into pesto rosso, or in salads and focaccia. Their concentrated flavour means a little goes a long way, and the aromatic oil can be reused to dress dishes.

Storage
