La Monella Tamburro Burrata 200 g Case 1.6 kg – Quick Overview

Italian fresh artisan burrata in single 200 g pieces, professional case 1.6 kg (8 pieces), produced by Latticini Molisani Tamburro in Baranello (Campobasso, Molise) under the La Monella brand. The 200 g format is the gourmet table-share portion, ideal for restaurants and gastronomies.

Burrata: Invented in Andria in 1956

Burrata was invented in **1956 in Andria (Bari)** by **Lorenzo Bianchino Chieppa** of Caseificio Bianchino as a way to reuse leftover mozzarella trimmings. Bianchino mixed the trimmings with fresh cream and wrapped them in a sheet of pasta filata, creating a pouch that preserves the creamy "heart". In 2016 it obtained the **IGP Burrata di Andria**, reserved for the original territory. Most commercial burrata (including La Monella di Tamburro, in Molise) is NOT IGP but respects the original technique.

Professional Uses and Serving

Signature starter: 1 burrata 200 g + 4 confit datterini tomatoes + 6-8 basil leaves + Cilento DOP extra virgin olive oil + Maldon salt. Bufala-burrata-mortadella platter for 2 people. Gourmet burrata pizza (Sorbillo, Sgambati, Padoan): add AFTER baking, never in the oven. Lounge bar starter: burrata + Prosciutto Crudo San Daniele DOP. Summer salad with burrata, figs, crispy pancetta. Savoury canapés with burrata and Cantabrian anchovies. ALWAYS serve at 14-16 °C (remove from the fridge 20-30 min beforehand). Cut it only in front of the customer so as not to lose the fluidity of the stracciatella.
