Pavone Dried Bay Leaves 500 g Case 10 – Quick Overview

Whole dried bay leaves (Laurus nobilis), 500 g professional bag, case of 10 (5 kg total), Pavone brand. Mediterranean bay with intense aroma and slightly bitter resinous note, fundamental aromatic of Italian, French and Mediterranean cuisine.

Mediterranean Origins

Bay laurel (Laurus nobilis) has been a sacred plant since antiquity: the Greeks used laurel wreaths to honour poets and athletes (hence "laureates"), and the Romans used them for military triumphs. It grows wild throughout the Mediterranean area. The leaves, harvested when mature and dried in the sun or in a dehydrator at 35-40 °C, retain their grey-green colour and concentrate the main essential oils: cineole (eucalyptol), linalool, eugenol. Pavone is a historic Italian brand of spices for the food service industry.

Professional Uses in the Kitchen

Beef stew (1-2 leaves per 1 kg meat, cooked for 3-4 hours). Brasato al Barolo (3-4 leaves). Slow-cooked tomato sauce (1 leaf per 1 L tomato). Court bouillon for fish (3-4 leaves + carrot + celery + onion + peppercorns). Piedmontese bollito misto (1 leaf per litre of broth). Stewed Castelluccio lentils (2 leaves per 500 g). Oven-roasted chicken (2-3 leaves in the cavity). Preserves in oil (1 leaf per jar). Marinades for wild boar, Easter lamb. Always remove the leaves at the end of cooking (never eat them). Toast briefly in a pan to activate the aromas.
