The Zwetschge (damson) is a dark, oval European plum variety prized in Switzerland, Germany and Austria for its firm flesh, low water content and deep, slightly tart flavour. It is the classic plum of Alpine pastry and is harvested in late summer. In this sorbet its character is carried by plum juice concentrate and rounded out with plant concentrates of aronia, elderberry and red beet for a deep purple colour, without artificial colourings.
