Sfera Sicilia, the pistachio dessert in single portions
Sfera Sicilia is a frozen pastry product in single portions, with pistachio as the star. Each carton holds 6 spheres for a net weight of approx. 900 g, each one ready on its own base. The weight may vary slightly: it is an artisan product. It thaws at room temperature in about 2 hours and goes to the table just as it is, with an eye-catching effect and no work in the kitchen.
The dessert
Each sphere is covered with a smooth white chocolate glaze, dotted with chopped nuts. It rests on a gold base with a scalloped edge and is protected by a clear lid, so it arrives intact and also looks good in a display case. The recipe combines fresh cream, pistachio cream and pistachio paste, almonds, eggs and flour, with a cocoa distillate syrup: a creamy, indulgent dessert with a full pistachio flavour.
Ingredients and allergens
Ingredients include fresh cream, white chocolate glaze, sugar, pistachio cream with 10% pistachios, eggs, almonds, pistachio paste, type 0 flour, egg yolk, rice starch, food gelatine and a syrup with 5% alcohol. On the label, ingredients in capital letters are considered allergens: MILK, LACTOSE, PISTACHIOS, EGGS, ALMONDS, SOY, PEANUT, HAZELNUTS, CASHEWS and FLOUR type 0. How to serve
Take the spheres you need out of the freezer and leave them at room temperature for about 2 hours before service, so it is best to plan thawing a little in advance. Once thawed and kept at +4 °C, they stay unchanged for 2 days. Serve them directly on the gold base or on a dessert plate, with no need for further decoration.
