About the Producer
These artichokes are made by Ristoris (Broni, Pavia, Lombardy), an Italian food-service specialist in preserved vegetables. The Elite line is their premium from-fresh range, processed from fresh artichokes for a firm, clean bite.
Characteristics
Small whole artichokes with a firm texture and a clean, slightly tangy flavour from the apple-vinegar brine. Preserved in sunflower seed oil. Halal certified, suitable for venues serving Muslim guests.
Professional Uses
Antipasti and boards (2-3 artichokes per portion, drained, with a drizzle of olive oil); gourmet pizza (4-5 halved on a white or margherita base); warm salads and bowls (40-60 g drained per portion); a quick saute with garlic and parsley as a side (80 g per portion); and fillings for panini, focaccia, savoury tarts and vol-au-vent.
Yield
Drained weight is 450 g out of 760 g (about 59%), roughly 7-11 antipasto portions per tin. Calculate food cost on the drained weight.
Storage
Keep in a cool, dry place before opening. After opening, transfer to a non-metal container, cover with oil, refrigerate at 4 C and use within 4-5 days. Drain and bring to room temperature before serving for the best flavour.
