What the porcino is

The porcino (Boletus edulis), also known as the king bolete or cep, is the most prized and recognisable wild forest mushroom in the Italian and European culinary tradition. Its convex brown cap, white pore surface that turns greenish-yellow with age, and stout pale stem make it unmistakable. It grows wild in coniferous and broadleaf woodlands and is hand-picked in the late-summer and autumn season.
