Penne Mezzanelli Lisce Gragnano IGP 500 g (Cartone 12) — Di Martino
Penne Mezzanelli Lisce Gragnano IGP by Pastificio Di Martino are durum wheat semolina pasta with Protected Geographical Indication (IGP), bronze-drawn and slowly dried at 40-85 °C to enhance aroma and cooking texture. Smooth short format, cooking time 9-11 minutes, 500 g pack in a case of 12.
Made in Gragnano, near Naples, the "city of pasta" for over 500 years, these penne are crafted from semolina with at least 14% protein and water from the Lattari Mountains, following the Pasta di Gragnano IGP specification. Pastificio Di Martino, founded in 1912, carries on three generations of pasta masters: in 1915 it was the first pasta to cross the Panama Canal. Bronze drawing creates a rough, porous surface that holds sauces perfectly.
Ideal for baked pasta, penne all'arrabbiata, Neapolitan ragù and timballi: the smooth format guarantees impeccable al dente texture even in high food-service volumes. Professional serving 80-100 g per portion. Over 1,500 chefs in Switzerland choose LAPA for authentic Italian ingredients.
500 g pack, case of 12 (6 kg). Store in a cool, dry place, below 60% humidity. Refrigerated and ambient delivery from the LAPA warehouse in Embrach. Order genuine Pasta di Gragnano IGP now from LAPA.

What is Pasta di Gragnano IGP
Gragnano, in the province of Naples, has been the city of pasta for over 500 years: documents already mention its dried pasta trade, favoured by the mild, ventilated climate of the Lattari Mountains that made slow open-air drying possible. The Pasta di Gragnano IGP, recognised at European level, requires production within the municipality of Gragnano, durum wheat semolina, water from the local aquifer, bronze drawing and slow drying. The smooth mezzanelli penne are a classic Neapolitan short cut, sturdy and versatile.
The producer: Pastificio Di Martino
Pastificio Di Martino was founded in 1912 in Gragnano, when Giuseppe Di Martino acquired the pasta factory where he had worked since childhood. The company carries on three generations of pasta masters and became, in 1915, the first pasta to cross the Panama Canal, reaching the Italian emigrant communities of America. Today it is one of the standard-bearers of the Pasta di Gragnano IGP consortium, combining family tradition with food-service-grade consistency.
Organoleptic characteristics
Pale amber colour typical of low-temperature drying, which preserves the lysine and the aromas of the wheat. The bronze-drawn surface is rough and matte, ideal for clinging sauces. On the palate the pasta is firm, with a clean wheat aroma and excellent al dente hold even after several minutes of carry-over in service.

Professional kitchen uses
The smooth mezzanelli format is built for high-volume service. Penne all'arrabbiata: bronze-drawn pasta, garlic, chilli, San Marzano tomato, finished with parsley. Penne al forno / Neapolitan baked timballo: blanch 7 minutes, layer with ragù, fior di latte and Parmigiano, bake at 200 C for 20 minutes. Penne with Neapolitan ragù (la genovese or classic): the smooth tube collects the slow-cooked sauce. Penne alla Norma with fried aubergine, tomato and salted ricotta. Cold pasta salad in summer (cook al dente, cool, dress). Professional serving 80-100 g per portion; 1 kg yields 10-12 portions.
Pairings
Pairs naturally with bronze-drawn tomato sauces, San Marzano peeled tomatoes, extra virgin olive oil, Parmigiano Reggiano and basil. For baked dishes, fior di latte and Neapolitan ragù. Discover the complementary LAPA range of peeled tomatoes, olive oil and Italian cheeses to complete the dish.
Common mistakes to avoid
Do not overcook: smooth penne are at their best at 9-11 minutes, drained al dente and finished in the pan with the sauce. Do not rinse after draining (it strips the surface starch that binds the sauce). Do not under-salt the water: about 10 g of salt per litre. Do not store in a humid environment, which compromises the dry pasta.
