A firm, aged and salted sheep's-milk ricotta, in pieces of about 700 g. Unlike fresh ricotta, this version is salted and dried to a compact, gratable texture, with a savoury, slightly tangy sheep's-milk flavour — a classic finishing cheese of Southern Italy.
What is ricotta salata?
Ricotta is a dairy product (latticino) made from whey, not curd. Ricotta salata is then salted and aged until firm enough to grate or shave. As a sheep's-milk version it carries more character than cow's ricotta, with savoury depth.
How to use it in the kitchen
Grate or shave it over pasta — it is essential to the Sicilian pasta alla Norma with aubergine and tomato — and over salads, grilled vegetables and soups. Its salty, dry character finishes dishes the way Pecorino does, but milkier.
