Ristoris Cantabrian Sea Anchovy Fillets in Olive Oil 700 g Case 6 – Quick Overview

Premium anchovy fillets (Engraulis encrasicolus) from the Cantabrian Sea, in olive oil, in a 700 g professional tin, case of 6 (4.2 kg total). Distributed by Ristoris (Cremona) for the Italian and Swiss food service. The Cantabrian sea anchovy is the gold standard for chefs: firm flesh, intense umami, clean salt curing.

Origine e Lavorazione Cantabrica

Cantabrian anchovies are caught in spring in the Atlantic waters between northern Spain (Santoña, Laredo, Castro Urdiales) and south-western France, where the cold current gives them an above-average fat content. Traditional processing involves curing in brine for 6-12 months in wooden barrels (salerón), followed by manual cleaning, deboning and filleting before packing in oil. It is the benchmark product recognised by Michelin-starred chefs such as Ferran Adrià, Juan Mari Arzak, Mauro Uliassi and Heinz Beck.

Usi Professionali e Ricette

High-end vitello tonnato: 4 Cantabrian anchovies for the sauce (vs standard anchovies, they provide superior depth of flavour). "Romana" or "Napoli" pizza: 6-8 fillets per 33 cm round pizza with San Marzano DOP tomato, Pantelleria IGP capers, Sicilian oregano. Piedmontese bagnetto verde: 3 anchovies per 500 g of parsley. Spaghetti aglio olio peperoncino with anchovies: 2 fillets per portion, melted in the pan in hot oil. Piedmontese bagna càuda: 100 g of anchovies per 100 g of garlic for 500 ml extra virgin olive oil. Gourmet bruschetta: 1-2 fillets on toasted bread with whipped butter and pepper. Tuna and anchovy tartare (Heinz Beck): gourmet pairing with Sorrento lemon reduction.
