What IQF octopus is
Individually Quick Freezing (IQF) chills the octopus rapidly right after cleaning, breaking down the muscle fibres from the start and tenderising the flesh without the long traditional pounding against rocks. Each piece is cleaned, eviscerated and flower-cut (arricciato) before freezing, keeping the tentacles evenly separated for easier portioning.
The processor: Discefa
Discefa, founded in 1982 in Cambre (A Coruña, Galicia), operates the largest plant in Europe built specifically for octopus processing, with capacity for 16,000-20,000 tonnes a year. The company holds FSSC 22000, ISO 22000 and HALAL certifications and distributes to more than 40 countries. The octopus itself is caught in the Eastern Central Atlantic (FAO area 34), off North-West Africa, then shipped to Galicia for cleaning, sizing and freezing.
Size T3
Size T3 corresponds to pieces of 2-3 kg each, ideal for professional kitchen service: even portions, consistent yield and a predictable cooking loss of around 30%. A carton holds several pieces for a total of about 16 kg gross weight, 12.8 kg net weight without glazing.
Professional uses
Slow-cook in unsalted water for 40-50 minutes, then sear or grill for classic grilled octopus, octopus and potatoes, seafood salad, polpo alla luciana or pulpo a la gallega. Recommended quantity 180-220 g of raw product per portion.
