What Agnoli alla Faraona are

Agnoli are a filled fresh-pasta shape from the Veneto tradition, similar to tortellini. This version encloses a rich filling of guinea fowl, ricotta, grated cheese, chicken, white wine and vegetables in an egg pasta shell coloured with carrot concentrate.

The producer: Checco il Pastaio

Checco il Pastaio is an artisan pasta workshop founded in 2010 in Creazzo, near Vicenza, by chef Francesco 'Checco' Barnes, who personally develops every recipe. The range covers filled fresh pasta (agnoli, tortelli, ravioli, cappellacci) with fillings from duck to pumpkin, mushrooms and fish, alongside gourmet and vegan lines.

Filling (66%): ricotta, guinea fowl 24.2%, grated cheese, chicken, milk, white wine (sulphites), celery, onion, carrot, olive oil, salt, spices, garlic, black pepper. Dough (34%): soft wheat flour, eggs 31%, carrot concentrate. Allergens: gluten, eggs, milk, celery, sulphites; may contain traces of soy and sesame.
