Dilmoor Alchermes Liqueur 0.7 L 15% Vol Case 6 – Quick Overview

Traditional Italian Alchermes pastry liqueur, 0.7 L bottle at 15% vol, case of 6. Brand Dilmoor. The historic vermilion red liqueur of Tuscan pastry, indispensable for the original zuppa inglese recipe and a symbol of Italian dolce tradition.

Origini Fiorentine: Officina di Santa Maria Novella

Alchermes originated in the **Officina Profumo-Farmaceutica di Santa Maria Novella** in Florence in the 15th century. Dominican friars created this red liqueur using exotic spices (Ceylon cinnamon, cloves, star anise, nutmeg, vanilla, orange peel) macerated in alcohol with cochineal (today replaced by natural E120 colouring). The Medici family of Florence loved it so much that for centuries it was known as "the liqueur of the Medici", gifted to kings and popes. The name derives from the Arabic "al qirmiz" (cochineal, the source of its intense red colour).

Usi Professionali in Pasticceria

Zuppa inglese (Tuscany, original recipe): soak savoiardi ladyfingers and sponge cake in Alchermes diluted 1:1 with water, alternating with pastry cream and chocolate cream. Zuppa inglese cake: 80 g soak for a 24 cm sponge cake. Pesche di Prato: pastries filled with pastry cream and soaked in Alchermes (traditional Tuscan sweets for All Saints' Day). Glazed Mantuan sbrisolona. Sicilian cannoli with scented shells. Alchermes Bavarian cream, semifreddo. Neapolitan babà variation with Alchermes instead of rum. Never heat above 60 °C (loses alcohol and aroma).
