Why 50% Fruit
At 50% fruit, above the 35-45% of standard jams, the flavour is more intense and the colour deeper, so the finished pastry tastes and looks of real raspberry rather than sugar.

Tarts (250-350 g spread on a 28 cm shortcrust base before baking; the heat-stable pectin prevents run-off); cake and sponge layering (80-120 g per layer, cold); brioche and croissants (15-20 g per piece by piping bag); krapfen and doughnuts (inject 20-25 g cold after frying); and glazing fruit tartlets for a glossy finish.
Yield
A 2 kg bucket fills roughly 8-10 tarts (28 cm), or 100-130 brioche/krapfen (15-20 g each), or 16-25 three-layer cakes.
Storage
Keep in a cool, dry place before opening. After opening, refrigerate at 0-4 C, keep covered and use a clean utensil each time to avoid mould. Gluten free.
