What dry babà are

Babà is a leavened pastry from Naples, traditionally soaked in rum syrup after baking. The 'secco' (dry) version is the unsoaked base, baked and ready for professional kitchens to soak, fill and finish according to their own recipe.

Mio is the brand of semi-finished pastry products for professional use distributed by Innovaction S.r.l., based in Ragusa. The range includes dry babà bases in a workshop format, supplied to pastry shops, bakeries and food-service operators.
