What is smoked pancetta?
Smoked pancetta is salted, seasoned pork that is lightly smoked and air-aged. The traditional method follows the rule "little salt, little smoke and plenty of fresh air": gentle smoking with low-resin wood at a smoke temperature below 20°C, then several weeks of aging in fresh air. In German, "Speck" commonly refers to smoked bacon. The result is firm and savoury with a delicate smoky aroma.
How to use it in the kitchen
Dice and render it to flavour pasta sauces and risotti, add to bean and vegetable soups, fold into frittate and scrambled eggs, use as a pizza topping, or wrap around meat and fish before roasting. Rindless, it is fast to portion and leaves little waste in service.
Storage
Keep refrigerated at 0-4°C, well wrapped. Once sliced, consume within a few days; the unopened vacuum piece keeps considerably longer.
