Pecorino Moliterno (Sheep & Goat)
A semi-hard cheese from Moliterno in Basilicata, made from a blend of sheep's and goat's milk, in pieces of about 2 kg. Moliterno belongs to the great canestrato tradition of southern Italy; the mixed milk gives a firm paste with a savoury, faintly tangy character.
How to use it in the kitchen
Slice it for cheese boards and aperitivo, grate or shave it over pasta, soups and baked vegetables, or melt it into gratins. The sheep-and-goat blend brings more complexity than a single-milk cheese and pairs well with honey, figs and robust reds.
