Pecorino Romano PDO

Pecorino Romano is a Protected Designation of Origin (PDO) hard sheep's-milk cheese from Sardinia, Lazio and the province of Grosseto. Salty, sharp and intensely savoury, it is the defining cheese of Roman cuisine. Supplied in 250 g portions, 12 per case, for professional kitchens.

What is Pecorino Romano PDO?

It is made exclusively from fresh whole sheep's milk, coagulated with lamb rennet, with a cooked, hard paste. The PDO area covers Sardinia — where about 97% is now produced — Lazio and Grosseto. It ages at least 5 months as a table cheese and at least 8 months for grating; wheels weigh 20-35 kg. Its roots reach back to ancient Rome, when it was part of the soldiers' rations.

How to use it in the kitchen

Pecorino Romano is essential to the Roman pasta classics — cacio e pepe, amatriciana and carbonara. Grate it over pasta, fold it into frittate, soufflés and salads, or serve it as an antipasto with honey, jams and nuts; in Rome it is traditionally eaten with fava beans on 1 May.

Storage

Keep refrigerated at 0-4°C, well wrapped to prevent drying. Bring to room temperature before serving as a table cheese.
