What is ricotta?
Ricotta is not a cheese but a dairy product (latticino): it is made from the whey left over from cheesemaking — from cow's whey, about 3 to 4 kg of ricotta are obtained per 100 litres. Gently heated, the whey proteins coagulate into the light, milky, slightly sweet curd we know as ricotta.
How to use it in the kitchen
Use it to fill ravioli, cannelloni and cannoli; in cheesecakes, tarts and desserts; folded into gnocchi and frittate; on pizza and bruschetta; or blended into creamy sauces. Its mild flavour carries both sweet and savoury seasonings.
Storage and logistics
