Verrigni Spaghettoro Affumicato is a long durum wheat pasta, gold-drawn and naturally smoked, in a 500 g pack. The gold die gives a smooth, silky surface, while the natural smoking process adds a deep, distinctive aroma that turns every dish into a gourmet experience. Cooking time 8-10 minutes, around 6 professional portions of 80 g, made by the Antico Pastificio Rosetano Verrigni, founded in 1898 in Roseto degli Abruzzi (Abruzzo).
What Spaghettoro Affumicato Is
Spaghettoro is a thick, long pasta format from Verrigni, the historic Rosetano pasta maker. The Affumicato version is the latest creation of the house: the durum wheat semolina takes on a completely natural smoky aroma, without additives, giving the pasta a warm, enveloping scent reminiscent of slow-cooked and grilled dishes. It is a long, robust spaghetto, designed to stand up to structured sauces and high-heat finishing.
Gold-Drawn Pasta and Slow Drying
In 2007 Verrigni introduced gold drawing alongside traditional bronze, working with the goldsmith Sandro Seccia. The gold die produces a more uniform, silky-smooth surface that releases starch in a controlled way and binds the sauce differently from bronze. The pasta is then dried slowly at low temperature, preserving the gluten network, the fragrance of the grain and the firmness in cooking that distinguishes high-quality artisan pasta.
Origin and the Producer
Verrigni is the Antico Pastificio Rosetano, founded in 1898 in Roseto degli Abruzzi, in the province of Teramo. Abruzzo is one of Italy's leading regions for durum wheat pasta. After more than 125 years of history, the pasta maker combines artisan tradition with research into formats and drawing techniques, becoming a reference for premium pasta in fine dining.
Sensory Profile
The gold-drawn surface is smooth and bright; in the mouth the pasta is firm and elastic, with a clean durum wheat flavour enhanced by the natural smoky note. The aroma is intense but balanced, never aggressive, and pairs beautifully with both land and sea ingredients.
Professional Uses in the Kitchen
- High-heat tossing (mantecatura): drain at about half cooking time and finish directly in the pan with the sauce over a lively flame, letting the pasta release its starch to bind the dressing creamily.
- Smoked carbonara: the natural smoky aroma amplifies guanciale and Pecorino Romano DOP, for a reinvented carbonara with great depth.
- Seafood sauces: excellent with clams, mussels and squid, where the released starch creates a perfect hydro-lipid emulsion off the heat.
- Butter and Parmigiano Reggiano DOP: a simple finish that lets the smoky note and the quality of the grain shine.
- Slow-cooked meat ragu: the robust spaghetto stands up to beef and pork ragu, wrapping the long-cooked sauce.
Pairings
Pair Spaghettoro Affumicato with durum wheat semolina, San Marzano tomatoes, extra virgin olive oil, basil and Parmigiano Reggiano DOP. For seafood dishes, combine with quality fish stock and white wine; for smoky recipes, with guanciale, Pecorino Romano DOP and black pepper.
