Produced by Molino Pasini S.p.A. Società Benefit, a family-run mill founded on 25 May 1965 in Cesole di Marcaria (Mantua), with origins dating back to the years between the two World Wars. Today led by the fourth generation, the company mills 4,000 quintals of soft wheat per day and exports to over 70 countries.
The high protein content ensures a tall, airy crust with excellent crunchiness, while the high maltose level developed during fermentation promotes optimal browning during baking.
