Ristoris Bourbon Vanilla Pods 30-40 g – Quick Overview

Whole Bourbon vanilla pods (Vanilla planifolia), 30-40 g professional box, distributed by Ristoris (Cremona). The most prized variety of vanilla in the world, with intense and complex aroma, indispensable in Italian and French haute pastry, gelato production and high-end cocktail making.

Bourbon Origins: Madagascar, Comoros, Réunion

Vanilla planifolia, native to Mexico, was brought to the French islands of the Indian Ocean in the 19th century (Réunion, then called Île Bourbon, hence the name "Bourbon vanilla"). Madagascar today produces 60-70% of the world's vanilla, thanks to its ideal humid microclimate and volcanic soil. The curing process lasts 6 months: scalding in hot water, sweating in crates, sun exposure alternated with resting, and final fermentation in chests. Every 5-7 kg of green pods yields 1 kg of finished product.

Professional Uses in Pastry and Cocktails

Semifreddo, Bavarian cream, frangipane. Vanilla syrup for cocktails (vanilla espresso martini, vanilla old fashioned, gourmet gin and tonic). Vanilla sugar (1 toasted pod in 500 g sugar, rested for 7 days). Split the pod in half lengthwise, scrape out the black seeds (caviar), and infuse the empty pod + seeds together in warm liquid at 80 °C for 30 min.
