Calzoncello Mozzarella & Tomato 30g: Italian street food ready to fry
The Calzoncello is a small parcel of pizza-style leavened dough, filled with mozzarella and tomato, breaded and pre-fried, then frozen to preserve all its fragrance. Each piece weighs about 30 grams, a mini size perfect to enjoy in a single bite, ideal for aperitifs, buffets, finger food and starters. Born from the gastronomic tradition of Southern Italy, the calzoncello brings the authentic taste of the Italian rosticceria to your customers' table: a golden, crispy crust on the outside and a soft, stringy heart inside. Distributed in Switzerland by LAPA, this product is designed for restaurants, pizzerias, bars and catering looking for a fast, versatile and high-yield solution.
The filling: melting mozzarella and tomato
The heart of the Calzoncello is the classic combination of Italian cuisine: mozzarella and tomato. The mozzarella, melting during cooking, delivers that delicious stringiness that makes every bite irresistible, while the tomato adds the fresh, slightly tangy note that balances the richness of the cheese. The soft, lightly leavened and breaded dough shell transforms during cooking into a crispy casing that encloses the hot filling. The result is a balanced savoury snack, recognisable and loved by everyone, from children to adults.
- Outer dough: pizza-style dough, leavened and breaded for even browning
- Filling: mozzarella and tomato, for the classic pizza taste in mini format
- Texture: crispy outside, soft and stringy inside
- Size: about 30 g per piece, single-portion finger food
2.5 kg carton format and frozen product
The Calzoncello is packaged in a practical 2.5 kg carton, corresponding to about 80-83 pieces: high yield and a very competitive cost per portion, ideal for those working with large volumes. Being frozen, the product keeps for a long time without waste: you take only the pieces you need and return the rest to the freezer, reducing waste and optimising stock management. The calzoncello is cooked directly from frozen, with no need for thawing, ensuring quick service even at peak times.
How to cook: frying or oven
The Calzoncello offers maximum flexibility in the kitchen, suitable for both traditional frying and oven baking for a lighter version.
- Frying: immerse the still-frozen calzoncelli in plenty of oil at 175-180°C for about 3-4 minutes, until evenly golden. Drain and serve hot.
- Oven: arrange the frozen pieces on a tray with baking paper and bake at 200°C for about 12-15 minutes, turning them halfway through for even browning.
- Air fryer: 180°C for about 10-12 minutes, ideal for a lighter result without giving up crispiness.
In all cases it is important to serve the calzoncello hot, when the mozzarella is still melting and stringy.
Pairings and serving ideas
The Calzoncello is extremely versatile and lends itself to numerous menu proposals. Serve it as a nibble during the Italian aperitif, accompanied by rustic sauces, or include it in a mixed fried platter together with arancini, croquettes and supplì. It pairs perfectly with:
- Fresh tomato sauce, pesto or flavoured mayonnaise for dipping
- A glass of fresh white wine, a craft beer or a spritz
- Warm finger food compositions for buffets, catering and events
- Take-away and street food offers for bars and kiosks
