Ristoris Whole Pink Pepper Berries 150 g Case 2 – Quick Overview

Pink pepper berries (Schinus terebinthifolius) whole dried, 150 g professional jar, case of 2, distributed by Ristoris. Premium spice with elegant floral aroma, signature ingredient of nouvelle cuisine and modern Italian fine dining.

Origins and Myths

Pink peppercorns are NOT true pepper (Piper nigrum) but the fruits of the **Schinus terebinthifolius** (Brazilian pepper) or **Schinus molle** (Peruvian pepper) tree, native to South America. Introduced to Europe in the 20th century as a gourmet spice, they became an icon of 1970s-80s **French nouvelle cuisine** (Paul Bocuse, Michel Guérard) for their pink-red aesthetic and delicate aroma. They should not be used in large quantities (they contain cardanols which in high doses can cause reactions in people allergic to cashews - same botanical family).

Professional Uses in the Kitchen

Crusted salmon fillet: 1 crushed teaspoon for 4 servings. Sea bass carpaccio: 6-8 whole berries per serving + EVOO + Maldon salt. Foie gras with pink peppercorns (Bocuse): 5 crushed berries per escalope. Creamy chicken with pink peppercorns (sauce poivre rose): 1 tablespoon per 500 ml fresh cream. Veal in pink peppercorn sauce. Tuna tartare with pink peppercorns. Gourmet dish garnish: 2-3 whole berries on white sauces for colour contrast. White chocolate and pink peppercorn ganache (modern pastry). Never cook for long - it loses its delicate aromas. Add at the end of cooking.
